I am about to create a new blog and I feel the need to get experience in SEO. Could you please share your experience where did you learn SEO? Which courses did you take? Was it useful? Which ones you do not recommend? Thanks in advance!

You will find helpful advice there, both on what to do and what not to do.
Perhaps the best place to start is with their Search Engine Optimization Starter Guide.
There are many courses available on the market but they are not all useful. I will suggest you to join SEMrush Academy and read the blog blog of backlinko. Because these are two places which are full with complete knowledge and for the extra knowledge they will suggest you some external links.

You can take courses but I think SEO is not that can be learned by a course. You can know some know-how but in order to learn it completely or become a master in that, one requires experience. So my advice is to just start your blog or anything you want and do a lot of practice. Don’t just hard work but smart hard work. And regularly read blogs like Neil Patel, Backlinko, Moz, etc. All the best in your journey. 
Also, you can just google what exactly you are interested in. There are a bunch of SEO blogs which may be helpful. And the idea about Google Guidelines is brilliant.
There are lots of online certification course for SEO is available in Udemy.
