Recently my work has asked me to find a course which specifically covers building templates in Joomla, I’ve been searching around with a coworker however we haven’t found anything useful. I’m in Melbourne so if anyone knows of any here please let me know.

If I were you, I’d redirect my attention towards the Joomla community itself, as they’re far more likely to harbour local Joomla professionals. If you know who to talk to Twitter can also be a great place to go to find the courses you’re looking for.
More often than not, there are a lot of companies that are happy to offer training in the software they work with, from a consultancy basis. These can be quite pricey, but I would definitely recommend looking around at the top Joomla shops in Melbourne and seeing if any of them offer courses or training in Joomla.
