I think emphasizing the list of Subjects (i.e. “Which of these subjects”) located below in my form is important. It’s a pick-list.
Depends on what answer you want, I’d say.

Although most interesting implies one, so therefore I’d say the first is correct.

Here is what I am trying to do and say… (This is embarrassing, because I am usually so good with words! Must be time for breakfast…)
I have a listing of 20 Subjects that users can choose from.
I want to a user to choose up to 5 that they find the most interesting.
So, while you may find all 20 Subjects really interesting, you can only choose up to 5 - otherwise the survey isn’t of much use if someone effectively says, “I like them all…”
You could choose just one, or two, all the way up to 5.
And I want a clear, concise label for this form.
Make sense?

Yes, that is good. However, doesn’t adding in “most interesting” add extra value?
Again, a person might find most of the subjects interesting, but I want to know which ones are “most” interesting to them.
It’s splitting hairs, I know!

Prepositions spring to mind, how about:
