Does anyone have any suggestions on hosting for these countries?
If possible can someone explain to me how content delivery networks go about, is it an entirely new type of hosting or just some bonus feature offered by the host? When would one need CDN?

Any Canadian or US based VPS provider will work great for those audiences I think. A VPS should be fast enough to compensate for the distance. If you are really worried about catering to those audiences, why not look local for a provider?
