Middleman - change engines and templates

Hi

Been looking around for an article on using alternative engines and templates with middleman sitepoint has an article however it just uses defaults
Free Static Sites with Middleman and Github.

What is the best way to use say haml or slim and stylus and lost grids etc?

Anyone know how to switch things out and manage assets etc?
