Mail not parsing headers?

	  $to = '';
      $subject = 'Member Account Created';
      $message = "<b>Blarg</b><p>moo cow whatever</p>";
$headers  = 'MIME-Version: 1.0' . "\\r\
$headers .= 'Content-type: text/html; charset=iso-8859-1' . "\\r\
$headers .= 'From:' . "\\r\
	  mail($to, $subject, $message, $headers);

I get out:
email from “-” (No from header)
Subject: Member Account Created
Email message body contents:
Content-type: text/html; charset=iso-8859-1

Message-Id: <>
Date: Wed, 8 Dec 2010 11:10:14 -0500 (EST)

<b>Blarg</b><p>moo cow whatever</p>

(note: Mail contents are still plaintext, not HTML)

Any idea what’s wrong where?

I just suspect it is because of \r
instead of
because this is treated differently depending upon operating system.

Or compare the codes given as an example here:
