When you want to answer the question, “How old is this website?” Is it a sound strategy to look the url up in whois.domaintools.com/ For example sitepoint registered May 04, 2000
Is this a sound technique?

On the whole, yes - although you have to keep an eye out for things like breaks in registration. The domain has not necessarily been owned by the same person throughout.
