You can also utilise a two line strategy to handle calls outside of business hours.

During those hours, have a voicemail that says that the offices of xyz.com are currently closed, and that *emergency* calls should be directed to 555-555-5555.

The caller then knows that they are calling outside of office hours. Most will wait. Some will not. But at least you have not cut off emergency contact completely. After all, it might be your hosting supplier :)

Don't forget, when dealing with client calls, that it's all about consistency too: Define your rules and then stick to them with all of your customers.
When you have a business that has been built on referrals, expectations are often set by the referrer long before you get a chance to set the boundaries yourself!
