I imagine most people neither know nor care whether their emails are plain text or HTML. Just like they don’t think about whether they should upload a massive image and let the site they’re uploading to resize it, rather than resize it themselves before they upload it. Most non-tech people don’t know anything about any of this stuff, as long as it all seems to work.
