Which one of these would you use for animage.jif
I wouldn’t, I would use one of the standard acronyms that everyone knows and understands instead of an arcane one that only a handful of geeks know and only use to look superior over lesser beings. In particular, no-one uses an extension that would lead to inevitable confusion with .gif, which again is common and which most people know and understand. I have never come across a file named .jif in real world deployment. Therefore I would pronounce it as jay-peg, because that is how anyone with any sense would have named the file.
