Why would you not pay taxes? Is there some circumstance that may allow you to avoid taxes, or are you just asking if you should commit fraud or not?
I think that you don’t need to pay taxes if you chose check payment.

It is income…right? Income, subtract expenses, that is what you pay tax on.
The payment method is irrelevant. The only thing that is relevant is whether or not you are required to pay income tax on your income. If so then that forms a part of your income and so you declare it in the appropriate spot on your tax form. Whether or not you end up paying tax on it depends on how much income you get from them, how much other income you have, and the tax laws in your country as to how much tax is payable on your total income and what deductions you are allowed.
Yes. Google is reporting what they pay you to the government and you have to report it on your income taxes.
Why would you think that you don’t have to pay taxes?
You can always tell who pays their taxes and doesn’t cheat by reading their strong responses to this kind of question!

Google tracks your SS# or TAX-ID, and send you a total for your taxes usually at the end of year. You do have to file those or you can get in trouble
I would think that checks are especially transparent for government scrutiny. You are essentially operating in full view of the federal banking system.
in most of countries you py taxes on all income you receive, there are soem countries which only tax you income within the country of residency
It make no odds if its payed by cheque or into your bank account you are ‘responsible’ to declare and pay the tax if applicable to your countries current tax laws.
one thing you NEVER do is mess around with the tax man - he will have your hide for his boots and leave your carcass out in the sun for the vultures.
Doesnt matter where you are in the world - the taxman gets paid - end of.
