I’m probably being extremely dumb but I’ve been asked to set up PayPal Express Checkout on a website. I’ve searched Google for info on this but have come up with two different things and I’m not sure if they’re the same thing or not.

If they are both PayPal Express then what’s the difference between them?
Those are one of the same merely different pages of documentation for the same topic. There are two main payment methodologies for Paypal: Direct and Express payment. Direct can be used a server-side payment processor. Express on the other hand makes it obvious to the end user they are checking out on Paypal. The Paypal documentation does a good job of explaining this all when read.
