I installed Next Gen Gallery on a WP blog - everything works correctly, but I would like the sidebar widget to show 12 thumbnails - the max choice in the widget is 10. Where can these setting be changed?

There are 12 stylists and the max number I can choose is 10.

I am familiar with neither of those packages, but suggest you search through the NGG source code for the number 10 and see if you can find where it is set.
