If I want to point my domain name to a website where the files are sitting at a different host, I simply need to update the name servers at the registrar right?
What happens if create a subdomain? how do I point it to a specific folder on the website?
I did and they said I need to edit the htaccess file, but they won’t support me with any coding! So I’m still not sure how to do it.
So lets assume I haven’t configured a htaccess to deal with the subdomain, where will the subdomain take me by default? To the root folder? I can’t test it because propagation apparently takes 48 hours but I get the feeling its not going to work.

yes.

afaik this can be done easily within the control panel provided from your host.

From the side of web host: add your DOMAIN NAME to the account
From the side of domain name registrar: Change nameservers or A record (in this situation you will need to leave nameservers as default)
Wait up to 72 hours (that will not go immediately)
Each web host must have control panel. In any case if they are not able to provide that for you better to change web hosting service. Or everytime ask them to do something for you about your web hosting account.
