We have a very lovely lady working in our office and she is leaving now, and everybody is starting to think what gift do we need to give her,

Give her Pen set or you can gift her Mobile phone according to her interest.
I would say a cannon digicam is the best gift. 
It is hard to say without knowing what she likes and what she needs. She may have a good friend at the office. Maybe that person know what she would like to have, something that she wouldn’t buy herself.
