I find it helpful to name the variables with a prefix like “clean_” or “safe_” after they have been sanitized so it can be easy to recognize that they are no longer raw user input. Not so important for short scripts, but for longer ones it saves from having uncertainty eg.
$safe_username = sanitize($_POST['username']);
