Customise the List of Image Sizes?

Is there a way to customise the list of image sizes that comes up after a user uploads an image?

I’d like to replace them with ones specific to the website, rather than the not-very-useful defaults that Wordpress comes up with.

I tried add_image_size but that did nothing but create new thumbnails in the uploads folder. It didn’t create any options use said thumbnails in the TinyMCE interface (screenshot), so I get the impression that I’m missing something somewhere.
