I am moving my virtual dedicated server from GoDaddy to Media Temple. (any thoughts?)

My questions are really concerning transferring the email accounts. Lets say I copy all files & databases from current server to new server. Everything looks good when testing the website on the new server through the IP address.

The tricky part for me is when to change the MX records to point to the new server, and how it will effect email. I know in order to setup email on the new server, I have to have the domains in the same account?

In my mind, when I throw the switch to point to the new server, I am going to have to wait 24-48 hours for it to propagate, then in a mad rush setup my 16 email accounts for the company. Then there is the issue of backing up the old email and transferring it to the new server. amirite?
