Updates for what? Joomla itself? Plugins/Extensions? Templates?

    Updates frequently address security flaws.

If I recall correctly, Joomla has a wiki page explaining good security practices for a Joomla-powered website.

If that doesn't answer your question, can you elaborate? I'm not quite clear on what your question is.

    - If you run few, simple sites, simple apply the updates, it shouldn't take longer than a couple of minutes per site

    - If you run few complex or hacked sites, put them into subversion and deploy with subversion. Then apply update, do extensive testing (this should be written down for easier repeat) and you're good.

    - If you run many simple sites, you better look at automation, either
    a) all sites run off the same code
    b) update application is automated (svn may be your friend again or whatelse is used for automated deployment)
