I wish to take a coloured picture and convert it to single colour but leave the background as it is (in this case white). Exactly the same principle as converting to greyscale, but being able to set the colour of the greyscale.
I have looked everywhere in Adobe Photoshop 6, but cannot find how to do it.
Personally, I use the Image > Adjust > Channel Mixer. Set it to a monochromatic and you can go ahead and readjust t5o the shade of gray you want. It should preserve the background if it's white anyways.

if you want to set the color of your greyscale.. select the parts you want to b&w , make a new layer, color with grey - black whatever according to your needs and fill. change the blending to color - voila
