1. Your website will not be down for a long if you change DNS asap at your new registrar.
2. You will not miss your emails.
Best regards.

If you have the same site set up at both locations then there will be zero down time for people viewing your site. The only restriction on the site itself will be that those people visiting it on the old hosting after the transfer starts will not be able to apply any updates. How long that will apply for depends on how long it takes the Domain Name Server they are using to be updated to point to the new hosting. Most will pick up the change within a few hours with a rare one taking several weeks.
The easiest way to make sure you don't lose emains is to set up the accounts on your new hosting before starting the domain transfer and redirect all the addresses on the old hosting to an email address on another domain (or use an entry in the hosts file on your computer to provide you with access to webmail on the old hosting to check for any emails that find their way there).

How do you re-direct incoming email? If I can do that that would be perfect. I use generic shared hosting with cpanel if that means anything.
Um... have you not heard of cpanel?I use generic shared hosting with cpanel if that means anything.

If you are just changing the domain name registrat but not transfering the web hosting, then there will not be any downtime since the DNS server remain the same.

I had interpreted the question as being about changing hosting since there is no down time at all with changing registrar.
