What I don't back-up? Easy (at least since I got a CD burner).
1: Some of the files that haven't changed since the last time I saved a copy of them.

    What I don't back up are :

    1. Files where I already have enough backup copies of that file and don't need any more.
    2. Temporary files.

You have to also ask. how often?, Where? and How? you backup.
I have two external storage for backup.
    1) 500 GB for archiving my files.
    2) 80 GB small portable drive for backing up frequently accessed files!

BUT I am always afraid of loosing all these backups and original files by fire/theft! in my work place.

I had a bad experience when one of my hard drives fails

I backup everything. I actually boot off of a CD and do a 1 for 1 copy of the drive, because I don't have time to sort through the piles of stuff I have to figure out what I would cry over if I lost. I just keep the backup on an external drive that sleeps after I am done, and I turn it off. I do that every few months, because the rest of my frequently used files, and most important ones are synced to several encrypted locations, so no matter what, those will be saved. I admit, an EM pulse would still wipe me out for the most part, sad really.

I couldn't imagine anything I'd not backup. Maybe the virtual files generated on bootup, such as /proc and things in /tmp, but you probably wouldn't have a file on your system if you didn't want it. Always back up everything, unless you're short on room, then sure, decide what's not important to you.
