You want to setup the email subscription option?

If so, then it is easy to do with feedburner.com where you will find options to place the feedburner subscriber box in your blog.

Well I am not sure what I want to do as I am not sure what I can do really with rss.

At the moment I have it on the site and when people click it they are taken to a 'subscribe now' page, just wondered if their was more I can do/track with it?

you don't have to do nothing with your own feed, just submit it to Feedburner and alike services and check out plugins they offer!

Several forums allow you to add you blog to profile/options and it will list under your user name and number of post you have on that forum. It will actually show your most recent blog title.

At a high level, an RSS feed is just an XML document that your software puts onto your server. So if you have www.yourblog.com, the blogging software might put the rss feed at www.yourblog.com/feed/ (wordpress would). Everytime you make a change, the change will be reflected in your XML.

The way it works is that other people can subscribe to your blog by adding the feed url (the path to the XML doc) to their RSS reader. Their reader will then go check that URL for new content at intervals, in order to keep the user up to date with your content.
