not sure why you are limiting to just Java but I would consider 123flashchat a try. I have this on my site and it never crashed in past year. Still, it is quite expensive chat software.

we have found that flash chat or quite heavy in comparision to flash chat...we have considered flash chat as well but are heavy...

so java appalet chat seems to be fast and good...
