During modification of view structure must - of course - the template be re-generated. Manual changes in templates are non-permissible.

I don't like the idea of generating the templates either. I'd rather have a generic template that I can override with a custom template if I need to. It works, its fast, might not be as user-friendly as a hand-written template, but at least it doesn't break when schema changes, which is the whole point.

Well with scaffolding, you choose whether or not to re-generate the templates. So for most small changes, it's much simpler just to go in and make the modifications by hand, especially after you really learn the syntax and the way the system works. If whatever you're building is automated, be sure to have some sort of user prompt/warning about overwriting.
That said, I do like your idea of having a generated backup form that will only be used if a proper one is not found. That sounds like it may work well in this case.Stackbox CMS - Full edit-on-page drag-and-drop CMS
