Have you looked at the Adobe books themselves? They bring out an updated book each new version. It covers many things you need to know, but you'll need to be more spoecific if you want to learn certain things. There are books out there for graphic design in PS and books for digital illustration also.

I have the SitePoint book photoshop anthology which deals with web graphics and some image correction. I have adobe's Photoshop book which gives you a wide introduction into all the various tools etc, and I'm currently researching a digital illustration book to get, but I've not found one as yet.

Personally I find that I learnt the Adobe range much much faster through training videos. There are several good companies like Lynda and VTC that have very cheap monthly online access rates but for Photoshop I've found Total Training to be the best series to get up and running with the program. Deke Mclleland clearly loves his job and he is very good at keeping the long sessions upbeat and informative.

Lynda.com is a great source for tutorials. I used their Dreamweaver book to teach a university course and it worked flawlessly. I highly recommend their photoshop and flash books too.

    PS and Illustrator Books

I agree Lynda.com is great and even when using PS books you can go there to get additional information or help.

Personally the books I use are the Professional Portfolio Series:
Adobe Photoshop CS3 and Adobe Illustrator CS3
These are put out by Against The Clock their website is:
