Parsing information from a forwarded email

Is there an easy way to parse out the information in a forwarded e-mail
from Outlook on a MAPI server ABOUT the original message? e.g. The date,
time, and e-mail address of the original sender, not the person who
forwarded it? Also, how does one get the sender's e-mail address out of
    a regular email?

The sender's information is held in the e-mail header. In Outlook, you can view the header information by opening the e-mail (in a seperate window - not the preview pane), and selecting Options from the View menu. You'll then see a display of all the header information that is usually hidden. The senders e-mail address is held in the From: field.

I think Outlook will strip out the original header and create a new one when you forward the e-mail. Therefore, you will lose the original header information, including the original From: field entry.

However, you can test that for yourself. Forward an e-mail to yourself and then do a View > Options to view the header information in the new e-mail. You should then be able to see the format of the new header.
