How to extract values from incoming email?

Hello,

I am new to PHP and MySQL but have worked with Javascript and SQL. I know I can handle forms manipulation and database access, etc. What I need to do is recognize an incoming email (with certain SUBJECT line) and read values from it. Does anyone know how to do this? Can someone point me to an example or give guidance?
