! characters coming up in output

I have written an e-mail script that takes the passed values from a form and e-mails it. It is an html e-mail with a little bit of formatting.

For some reason ! marks appear in the output, it seems to be pretty random.

Has anyone seen this before?

Oh and my php version is 4.3.10.

If anyone wants to see a snippet of the script i can provide.
