As far as a shopping cart, what is your website being hosted on - windows / unix? If it is unix, check out www.oscommerce.com. If it is windows - I have a basic ASP shopping cart: https://ssl29.securedata.net/merchantaccounts4le/test/ - if you like that, let me know & I can send it to you.
As far as shopping carts go, I would recommend OSCommerce over anything. It is open source, so you can use existing modules (or create new ones) that will handle almost anything you need. And for processing, get in touch with me and we will discuss details.

How many hotels are we talking about? You need to consider having one main database to help to maintain room availability. But also - do these hotels also have access to the net - or another way to update the database if someone walks in off the street?
I am not certain if Paysystems offers what is called pre-authorization. This is where you verify the CC for a certain amount, say $100. Now this $100 belongs to your company. But the problem with this is it only belongs to your company for a limited time - and that varies per bank. It could be as little as one week & maybe a month.
We actually do not offer pre-auth...too much risk when you put that kind of control into the merchant's hands. I am not sure which providers do, although i am sure there are a couple out there.
Ah sorry. But the pre-auth is a pain teraexp. Your other option - bill the CC for a portion of the total bill, or bill for one night. You might have to do a refund but it might be easier in the long run since the CC companies are all different in that regard.
